Tortellini and Vegetable Soup Recipe
A simple but delicious soup you'll make again and again.

8 cups Chicken Broth
1 cup peas, cooked 1-2 minutes
1 cup carrots, cut into julienne strips 1 inch long and cooked 2-3 minutes or just until crisp tender
1 cup mushrooms cleaned and sliced
2/3 pound tortellini, cooked el dente
1/2 cup freshly grated Parmesan Cheese
In a medium stockpot, bring chicken broth just to boiling. Add peas, carrots, mushrooms and pasta. Ladle into bowls. Sprinkle with Parmesan.
NOTE: I don't recommend preparing this too far in advance because the pasta will absorb more of the broth and become a bit mushy. It's just perfect prepared right before you eat it.
This soup recipe could not be easier. It's perfectly delicious exactly as written, although you could jazz it up a bit if you like.
I used cheese filled tortellini but you could use any kind you like. You could use vegetable broth instead of chicken broth. You could add bits of cooked chicken. Just use your imagination.
