Banana Nut Cupcakes - The Best Recipe Ever
This recipe for Banana Nut Cupcakes has been in my husband's family forever. I do not know the origin but I do know that my mother-in-law was making these long before I ever met her wonderful son. She was famous for these cupcakes.
Not long ago I made a batch and when I told a good friend of ours (who knew and loved my mother-in-law) he asked with wide eyes, "Norma's Banana Nut Cupcakes?!!" Like if I made any other recipe he wouldn't be interested! Oh my goodness, they are THAT good.
So that's the story. Now for the recipe...
The Coveted Recipe
Well, coveted by our family, at least!
TO MAKE THE CUPCAKES:
1/2 cup shortening**
1-1/2 cup sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla
1/2 cup buttermilk or soured milk
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts
Cream shortening and sugar until light. Add the eggs and beat well. Stir in the mashed bananas and vanilla. Stir dry ingredients together and add alternately with sour milk. Add the walnuts.
Fill each muffin tin about 1/2 full. Bake in greased or papered mufin tins for 20 minutes at 350 degrees F. Cool completely and frost with the Banana Frosting.
TO MAKE THE FROSTING:
Stir together 2 cups sifted powdered sugar, 1/3 cup butter, 3 Tablespoons of mashed bananas and 1 Tablespoon of lemon juice.
**NOTE: I use butter instead of shortening most of the time and they're great that way, too. Maybe better. (-:
Don't have buttermilk on hand? Just mix 1/2 cup sweet milk and 1/2 Tablespoon of white vinegar or lemon juice. Let sit for 10 minutes. Voila! Buttermilk!
As you now know, this is a special recipe. There are a couple of things I'd like to suggest, however.
First of all, I personally think that these cupcakes are the best when they're frozen. Yep! I love to keep them, unfrosted, in a container in the freezer. When I just can't stand it anymore and HAVE TO HAVE ONE I take it out of the freezer, frost it and eat it...sometimes just standing in the kitchen but more often with a cup of tea.
If you frost the cupcakes after they're cooled, it's a good idea to keep them either refrigerated or frozen since there is fresh fruit in the frosting. That is, if they last that long.
Personally, I try to hide them...selfish, I know but what the heck...it's every man (or woman) for him/herself, I figure.
